Chili Chicken

I was happy with my yesterday's attempt with cooking. The 'Theepi Attu' got me all enthusiastic as it's easy and so cheap. Moreover, I am having fun and some snacks in the evening all the same. So today's recipe is Chilie chicken, Its a yum time for all the chicken lovers out there, I was thinking to make it for a long time now.

So here is the Stuff you are looking for-

Ingredients: -
  1. Chicken (boneless would be better.) - 1/4 Kg
  2. Salt                                                    - 1/4 spoon.
  3. Turmeric powder                               - 1/4 spoon
  4. Red chilly powder                             - 1 spoon
  5. Garam Masala                                   - 1/2 Spoon
  6. Cornflour                                          - 3 spoons
  7. Maida (wheat flour)                          - 1 spoon
  8. Besan ( Gram flour)                          - 2 spoons
  9. Egg                                                    - 1
  10. Ginger garlic paste                            - 1/4 spoon
  11. Chilies                                               - 4
  12. Curry leaves                                      - Some
  13. Cashew                                              - Some
  14. Tomato sauce
  15. Soya Sauce
  16. Chili Sauce
Cut the chicken into small pieces (about 1/2 to 1 inch would be perfect), wash the pieces and rinse the water to clean the blood and waste if any. Add the 1/4 tsp Salt, 1/4 tsp turmeric powder (these are added to remove the smell of raw chicken), 1 spoon red chili powder, half spoon Garam masala, 3 spoons cornflour, one spoon maida, two spoons besan, one egg, and 1/4 spoon ginger garlic paste. Mix with a spoon or hand till all the ingredients are commingled.

Take a pan and heat to remove any water, pour oil and heat for a minute or two. you can test the heat by sprinkling the mixture on the oil. If there are bubbles in the pan, the oil is hot enough. Take a piece of chicken from the mixture and place it in the pan cautiously ( hot oil; don't throw the piece from a height, take it close to the oil and gently leave the piece for it to fry. Don't fret in anxiety if it makes any noise!) Let it fry till golden brown and follow the same with rest of the pieces. You can fry multiple at the same time.

Take out the fried chicken from the pan into a separate bowl. Take out some oil from the pan too, (for the next step, you need almost little to no oil in the pan as you are going to fry the chilies and curry leaves which will make sound and spill some oil droplets; so less oil). Fry four chilies, some curry leaves and some cashew for a minute. Pour a spoon of soya sauce, a spoon of Chili sauce, and a spoon of tomato sauce in the pan to fry for another minute. Turn the gas off, carefully take the pan and pour the sauce material on to the fried chicken to enjoy your 'Chili chicken'.
